Baked French Toast with Blueberries

In fact, this recipe was shared with us by a member of our Ember family whose special tradition is to bake this for their mother every Mother's Day, and now we're passing that love on to you. Ingredients
- 1 small French bread loaf
- 3 eggs
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 2 ¼ cups milk
- ½ cup flour
- 6 tbsp brown sugar
- ½ tsp ground cinnamon
- ¼ cup butter
- 2 cups frozen blueberries
Directions
- Slice the bread into 1-2 inch (depending on the height of your baking dish) slices and place in a well-buttered 9x13-inch baking dish. A casserole dish will do just fine as well! Make sure all the slices are packed together and there aren’t any major gaps or spaces between the slices.
- In a medium bowl, beat eggs, sugar, and vanilla until the sugar is combined with the egg. Gradually stir in the milk until the mixture is well blended.
- Carefully evenly pour half of the egg mixture over the bread. Make sure each piece gets covered. Then flip each slice over in the dish and pour the remaining half of the egg mixture over the flipped bread slices. Cover the baking dish with plastic wrap and refrigerate overnight to let the bread soak up the egg mixture.
- Remove the baking dish from the refrigerator and preheat oven to 375ºF.
- In a bowl, add the flour, cinnamon, and brown sugar together until fully combined. Make sure your butter is soft and cut in small chunks to mix into the dry ingredients. Work the butter in until the mixture begins to look like coarse crumbs.
- Flip the bread slices over one more time in the baking dish. Distribute the frozen blueberries over the bread. Sprinkle the crumb mixture evenly over the bread and blueberries. Sprinkle evenly with crumb mixture. Bake for about 40 minutes until the top is golden brown.
- Use a spatula to scoop a portion onto a plate to serve hot.
