Peach Syrup
- Wash your peaches, half them, and remove the pits. Slice the peaches into ¼” slices. Add the peach slices to a mixing bowl.
- Add the sugar and lemon juice to the peaches. Toss well until the peaches are completely coated in the sugar and lemon juice mixture.
- Cover the bowl with plastic wrap or a towel and place the bowl in the refrigerator for 30 to 60 minutes. During this time, the sugar and acidity from the lemon juice will pull the water from the peaches and replace it with sugar which is known as maceration. This process will render the peaches soft and surround them with their own juicy nectar.
- Remove the peach bowl from the refrigerator. Place a large strainer over another bowl and pour the peach bowl (juices and all) into the strainer. Let stand for 5-10 minutes so that all the juice has time to drip from the strained peaches. Every drop of that juice is now your peach syrup, so let it stand for as long as you please!
- Take the peach syrup and pour it into a mason jar or air-tight syrup bottle for easy use. This peach syrup can be added to cocktails, desserts, and even tea. We recommend The Crowd Pleaser from our friends at Firebelly Tea, it’s silky vanilla flavor will mesh well with a teaspoon of peach syrup.
- As for the macerated peach slices left in the strainer, you can use them in yogurt, overnight oats, and a variety of peach-themed desserts!
Hot Tail
- Toss all ingredients into a warm shaker.
- Shake it up for 30 seconds to ensure that all the flavors get a chance to mingle.
- Pour the hot-tail into your Ember Mug 2.
- Garnish your peaches & cream hot-tail with a macerated peach slice for that extra touch of sweetness.
We know this peaches and cream hot-tail will be a crowd favorite for peach season. Remember that any only the best hot tails are enjoyed at the perfect temperature in an Ember Mug 2.
